For the Crust:
1 package Foodstirs Sugar Cookie Mix
½ cup cold butter, cubed
1 egg white
1 Tablespoon grated grapefruit zest (1 grapefruit)
For the Filling:
4 large eggs
2 cups sugar
⅔ cup freshly squeezed grapefruit juice
⅔ cup unbleached flour
½ teaspoon salt
Confectioners’ sugar for dusting
With a fork combine Foodstirs Sugar Cookie mix, grapefruit zest and cold butter until fully incorporate.
Mix in egg white until the dough forms a ball.
Place dough in a buttered 9”x9” square baking pan and press in an even layer.
Place pan in freezer for 20 minutes.
While dough is chilling preheat oven to 350 degrees and prepare filling.
Whisk together the eggs, sugar, grapefruit zest, grapefruit juice, flour, and salt.
Pour over crust and bake for 25-30 minutes, until the filling is set.
Let cool to room temperature. Cut into squares and dust with confectioners sugar.
