2 packages Foodstirs Organic Pancake Mix
8 tablespoons butter, melted
1 cup Greek yogurt
1 1/3 cup milk
½ teaspoon baking powder
¾ cup raspberries (+ a few extra for topping)
¾ cup blackberries (+ a few extra for topping)
¾ blueberries (+ a few extra for topping)
Preheat oven to 375 º F and spray a large cast iron skillet with non-stick cooking spray. Set aside.
Whisk eggs; slowly add melted butter and continue whisking until mixture thickens. Stir in milk and yogurt. Add baking soda pancake mix and whisk until smooth.
Fold in the berries and pour batter into the prepared skillet. Top with a few extra berries. Bake for 35-40 minutes, or until toothpick inserted in the center comes out clean.
Cool for a few minutes and sprinkle with powdered sugar before serving.
