DirectionsPreheat oven to 375 degrees and line a baking sheet with parchment paper. In a small bowl combine flax meal and water, set aside to thicken for 2-3 minutes.
In a large bowl, using an electric hand mixer, combine pumpkin puree and flax mixture. Add flour and dry cookie mix and blend until a dough forms. Shape dough into tablespoon sized balls and place 1” apart onto prepared pan.
Bake 13-15 minutes, until the edges of the cookies begin to turn golden. Remove from oven and cool 5 minutes on cookie sheet before transferring to a wire cooling rack.
