Valentine Cupcakes

Valentine Cupcakes

Ingredients

1 package Foodstirs Vanilla Cupcake Mix

1 package Foodstirs Organic Vanilla Frosting Mix

1/2 cup + 2 tablespoons Greek yogurt

1 stick unsalted butter

1 egg

12 cupcake liners

For the craft:

1 sheet of glitter paper

Scissors

Hot glue gun

12 toothpicks

Directions

Wash your hands. Preheat oven to 350 degrees, and line a cupcake pan with 12 liners.

Whisk eggs in a large bowl, then add 5 tablespoons of melted butter and stir until mixture thickens.

Add 1/3 of the vanilla cake mix to the egg/butter mixture and whisk gently until blended. Gently whisk ¼ cup of the yogurt into the batter, followed by another 1/3 of the dry mix.Add another ¼ cup yogurt and remaining dry mix, and whisk until smooth.

Evenly distribute batter into the cupcake liners and bake for 15-17 minutes or until the top of the cakes are golden. Allow cupcakes to cool before removing from pans.

Use an electric hand mixer to cream the remaining 3 tablespoons of butter and 2 tablespoons of yogurt in a large bowl. Slowly add the vanilla frosting mix and continue whisking at medium speed until frosting is smooth and all lumps are gone.

Place frosting into a piping bag or Ziploc bag and pipe frosting onto cupcakes in a swirl design.

For the craft:

Use scissors to cut out small hearts from the glitter paper.

Apply a toothpick to the back of the heart with a small dot of hot glue. Allow glue to dry completely.

Insert a glitter heart topper into the center of each cupcake.
