Strawberry Tuxedo Brownies

Ingredients

1 package Foodstirs Organic Chocolate Lovers Brownie Mix

2 eggs

3 tablespoons water

1/3 cup oil

1 ¾ cup white chocolate chips

3 tablespoons heavy cream

2 cups fresh or frozen strawberries

1/3 cup granulated sugar

¾ cup chocolate chips (milk or dark)

12 large strawberries

Directions

Preheat oven to 325 degrees. Spray a cupcake pan with non-stick cooking spray.

In a medium bowl, whisk eggs together, add in oil and water until combined. Gently stir in brownie mix until well blended. Use a spoon to evenly distribute the batter into the cupcake pan.

Place cupcake in the oven and bake for 18-20 minutes, or until toothpick comes out clean. Allow brownie cupcakes to cool completely before removing from pan.

While cupcakes are cooling make the strawberry sauce. Combine 2 cups of strawberries with 1/3 cup of granulated sugar and 2 tablespoons of water in a medium sauce pan. Cook on medium heat until sugar dissolves. Turn the heat down to low and simmer until strawberries have softened. Place in blender and pulse until sauce is smooth, then pass through a strainer to remove seeds. Chill until ready to serve.

To make the strawberry tuxedos, begin by washing and thoroughly drying 12 large strawberries. Line a baking sheet with parchment and place ¾ cup white chocolate chips in a small bowl. Microwave in 10 second increments until chocolate is fully melted. Dip strawberries into melted white chocolate to coat, then place on parchment to harden.

Once the white chocolate is hardened, microwave with dark chocolate chips in 10 second increments until fully melted. To create the ‘jacket’, dip both side of the strawberry in the dark chocolate, on a diagonal and return to baking sheet to set. Dip a toothpick into the melted dark chocolate and draw the buttons and bowtie. Use the pointed end for the tie and the flat end for the buttons.

For the white chocolate ganache, combine the remaining 1 cup of white chocolate chips and 3 tablespoons of heavy cream in a small saucepan on low heat. Whisk until chocolate is fully melted, and ganache is smooth. Remove from heat and let cool about 10-15 minutes, until mixture thickens.

To assemble, remove brownies from pan and place upside down on serving plate. Use a spoon to spread the ganache over the top of each brownie. Once the ganache sets, top with a strawberry tuxedo. You can either drizzle the strawberry sauce onto the plate or directly onto the brownies.
