1 package Foodstirs Sugar Cookie Mix

1 Egg White

8 tablespoons butter, chilled and cut into cubes

1/2 tablespoon lemon zest

Strawberry jam


Wash your hands. Beat the butter until it becomes creamy. Add the egg white and mix until fully incorporated. In a separate bowl, combine the lemon zest and the sugar cookie mix, evenly distribute the zest with fingers. Add the dry mixture to the wet ingredients and mix until a dough forms.

Gather dough into a ball and cover with plastic wrap. Freeze the dough for 15 minutes until it is firm. While dough is chilling, preheat the oven to 350 degrees. Remove dough from freezer. Form dough into 1" sized balls and place 2 " apart on a non-stick or parchment lined cookie sheet.

Use your thumb to press a well in the center of each ball. Fill each well with 1/2 teaspoon of strawberry jam.

Bake for 10-12 minutes or until edges are slightly browned. Transfer to a wire tray and cool completely.
