Spiced Autumn Coffee Cake

Yields: 1 Loaf Cake


1 package Foodstirs Vanilla Cake Mix
5 tablespoons butter, melted & cooled
1 egg, room temperature
½ cup plain or Greek yogurt
1 teaspoon pumpkin pie spice
1 packet orange food dye



Wash your hands. Preheat oven to 350 degrees, and spray loaf pan with non-stick cooking spray.

Whisk egg in a large bowl, then add butter and stir until mixture thickens.

Add 1/3 of the vanilla cake mix to the egg/butter mixture and whisk gently until blended. Gently whisk ½ of the yogurt into the batter, followed by another 1/3 of the dry mix. Add the pumpkin pie spice and the remaining yogurt and dry mix, and whisk until smooth. Add the orange food dye and whisk until color is even.

Pour batter into loaf pan and bake for 15-17 minutes or until edges are browned.

Once cake has completely cooled, remove from loaf pan and sprinkle with powdered sugar.

Place on serving platter and decorate with leaves, figs, and other fall foliage of your choosing. Enjoy!Spiced Autumn Coffee Cake
