1 package Foodstirs Brownie Mix
2 eggs, room temperature
1 tablespoon water
1/3 cup oil (vegetable or grapeseed)
1 sheet graham crackers (8 crackers)
1 cup mini marshmallows (or 12 jumbo)
2 oz. chocolate (optional)
Wash your hands. Preheat oven to 325 degrees. Spray a cupcake pan with non-stick cooking spray, or insert liners.
In a medium bowl, whisk eggs together, add in oil and water until combined. Gently stir in brownie mix until well blended. Use a spoon to evenly distribute the batter into the cupcake pan.
Crush the graham crackers into large crumbs and top each cupcake with a generous amount. Bake for 15 minutes and remove from oven.
Immediately place marshmallows on the top of each cupcake and return to oven. Bake for an additional 3-5 minutes, or until marshmallows are a toasty golden brown.
Once cupcakes have cooled, decorate them with chocolate chunks and additional pieces of graham crackers.
