Pretzel Crusted Peanut Butter Brownies

Yields: 16 Brownies

2 cups pretzels, finely crushed
1/4 cup sugar or honey
1/3 (plus a few tablespoons) cup coconut oil, melted
1 package Foodstirs Organic Chocolate Lovers Brownie Mix
2 eggs
1/3 cup oil 
1 tablespoon water
1/3 cup creamy salted peanut butter
1 tablespoon powdered sugar



Preheat oven to 350 degrees and spray an 8x8 inch baking dish with nonstick cooking spray; set aside. Pulse the pretzels in a food processor until small crumbs form. Combine the pretzel crumbs with the sugar and coconut oil in a large bowl until well blended and the mixture becomes the texture of wet sand. Press the mixture firmly into the bottom of the baking pan. Bake 5-6 minutes then set aside to cool, 5 minutes.

Cool oven to 325 degrees. Whisk eggs in a medium bowl, then add oil and water and whisk until well blended. Add Organic Chocolate Lovers Brownie Mix and stir until combined; batter will be thick.

Pour batter into the pan, on top of the pretzel crust and spread evenly.

Combine the peanut butter and powdered sugar in a microwave safe bowl, then heat for 30 seconds until melted.

Using a knife, swirl peanut butter mixture through brownie batter until the pan is evenly marbled.

Bake for 19-22 minutes or until a toothpick inserted in the center comes out clean. Cool completely. Cut into squares.Pretzel Crusted Peanut Butter Brownies
