1 package Foodstirs Chocolate Lovers Brownie Mix
1/3 cup Vegetable Oil
1 tablespoon water
¼ teaspoon peppermint extract
4-6 candy canes
1 cup white chocolate chips
Wash your hands. Preheat oven to 325 degrees. Line cookie sheets with parchment paper.
In a medium bowl, whisk eggs together, add in oil, water, and peppermint extract until combined. Gently stir in brownie mix until well blended. Place teaspoon-sized scoops of batter 2 inches apart on prepared cookie sheets.
Place in oven and bake for 10-12 minutes, or until tops of cookies are firm. While cookies are baking, use a rolling pin or mallet to crush the candy canes into small pieces.
Once cookies have completely cooled, microwave white chocolate in 10 second increments until fully melted. Spread melted chocolate on the flat side of a cookie and top with another to form a sandwich. Continue making sandwiches with the rest of the cookies.
Use a fork to drizzle more white chocolate on the tops of the cookie sandwiches and sprinkle with crushed candy cane.
