Peanut Butter Whoopie Pies

Yields: 6 Whoopie Pies


1 package Foodstirs Brownie Mix
2 eggs
1 tablespoon water
1/3 cup oil (vegetable or grapeseed)

For the Filling:
1 package Foodstirs Organic Vanilla Frosting Mix
2 tablespoons butter, softened
5 tablespoons Greek yogurt
4 tablespoons organic peanut butter





Wash your hands. Preheat oven to 325 degrees. Line two cookie sheets with parchment paper and set aside.

In a medium bowl, whisk eggs together, add in oil and water until combined. Gently stir in brownie mix until well blended.

Use a heaping tablespoon or a coffee scoop to drop batter onto cookie sheets, using the back of the spoon to smooth batter into 3” circles. The batter spreads in the oven so make sure to leave enough space between brownies and only make 6 per cookie sheet.

Place in oven and bake for 9-11 minutes, or until brownies are firm to the touch.

While brownies are cooling, use a low-speed hand mixer to cream butter, yogurt and peanut butter in a medium bowl. Slowly blend in the vanilla frosting mix and beat on medium until mixture is smooth.

Place a spoonful of filling on bottom side of a brownie and spread. Top with another brownie to form a sandwich. Repeat with the remaining brownies and enjoy!Peanut Butter Whoopie Pies
