1 package Foodstirs Vanilla Cupcake Mix
8 tbsp cold butter, cut into small cubes
1-2 tsp cold water or milk
2 lbs assorted berries (blackberries, blueberries, raspberries and strawberries)
1/2 cup sugar
1 tbsp lemon juice
4 tbsp flour
Preheat oven to 425 degrees.
Rinse the berries and cut the strawberries into quarters. In a large bowl, toss the berries with sugar and lemon juice and let sit for 15 minutes.
Stir in the flour to the berry mixture and spread out the fruit into a square baking dish. Bake the fruit for 10-12 minutes, until it begins to bubble.
Meanwhile make the topping by putting the vanilla cupcake mix into a food processor, then pulse in the cold cubed butter until the mixture is crumbly.
Turn out into a large bowl and stir in 1-2 teaspoons of cold water or milk. Mix just until the dough comes together loosely.
Form into 6 equal rounds, it will be lumpy. Place the six biscuits on top of the hot fruit, making sure they do not touch.
Bake for another 16-18 minutes until the dough is golden and cooked through. Cover with foil at the end if it is getting too brown.
