Maple Bacon Cupcakes

Yields: 12 cupcakes

1 package Foodstirs Vanilla Cupcake Mix

1 egg
4 tablespoons butter, melted
3 tablespoons bacon drippings
½ cup Greek yogurt
4 tablespoons maple syrup
½ pound bacon
1 package Foodstirs Organic Vanilla Frosting Mix
3 tablespoons butter, cold
2 tablespoons Greek yogurt



Fry bacon in a skillet, reserving the drippings for later. Finely chop half of the bacon and set aside.

Preheat oven to 350 degrees and line cupcake tin with 12 liners.

Beat egg with melted butter and 2 T bacon drippings until mixture thickens. Add yogurt and dry cake mix and stir until combined. Add 2 T maple syrup and mix until well-blended. Fold in the bacon pieces. Place batter into prepared cups and bake for 15-17 minutes, or until tops are golden.

While cupcakes are cooling, use an electric mixer to cream 3 T of cold butter with 1 T of bacon drippings; then add 2 T Greek yogurt. Slowly add in frosting mix and blend on medium speed until smooth. Add the remaining maple syrup and beat for a few more seconds to combine.

Spread or pipe frosting onto cupcakes and top with the remaining pieces of bacon. For a little extra maple flavor, you can drizzle more syrup on top before serving.Maple Bacon Cupcakes
