Preheat oven to 350 degrees. Using a hand mixer, blend butter until smooth. Add egg, and Organic Chocolate Chippy Cookie Mix and continue to blend mixture until dough is formed.
Roll dough into large round balls. Insert caramel squares into center of the cookie dough ball. Place dough onto parchment lined cookie sheet. Do not flatten cookie dough. Repeat for each cookie.
Bake for 10-12 minutes, or until edges are golden brown. Cool cookie sheet for 5 minutes then transfer to wire rack. Sprinkle sea salt on top of warm cookies. Enjoy!
