Espresso Brownie Fries

Prep: 20 mins
Cook: 20 mins
Yields: 20 Espresso Brownie Fries

1 package Foodstirs Organic Chocolate Lovers Brownie Mix
2 eggs
1/3 cup oil
1 Tablespoon water
2 ½ Tablespoons espresso powder
1 cup dark chocolate chips
¾ teaspoon sea salt
Berry Coulis (for dipping)
2 cups fresh or frozen berries
1 Tablespoon water
1/3 cup granulated sugar

Preheat oven to 325 degrees. Spray an 8” square baking pan with non-stick cooking spray.

In a medium bowl, whisk eggs together, add in oil and water until combined. Add espresso powder and whisk until combined. Gently stir in brownie mix until well blended. Pour batter into pan and spread evenly.

Bake for 22-24 minutes, or until toothpick comes out clean. Allow brownies to cool completely.

Combine 2 cups of berries with 1/3 cup of granulated sugar and 2 tablespoons of water in a medium sauce pan. Cook on medium heat until sugar dissolves. Turn the heat down to low and simmer until berries have softened. Place in blender and pulse until sauce is smooth, then pass through a strainer to remove seeds. Chill until ready to serve in small bowl.

Place cooled brownies in the freezer for 15 minutes prior to cutting. Remove from freezer. Cut the brownie square in half and then cut each half into ten strips.

Melt the dark chocolate chips and spoon melted chocolate over the top of each brownie, allowing it to drip down the sides. Sprinkle with sea salt and serve with Berry Coulis.
