1 package Foodstirs Sugar Cookie Mix
1 stick cold unsalted butter, cubed
¼ teaspoon nutmeg
½ vanilla bean
3 tablespoons eggnog
1 ½ cups powdered sugar
¼ tsp vanilla extract
2 tablespoons turbinado sugar (optional)
Wash your hands. Beat butter in a large bowl until creamy. In a separate bowl beat egg, vanilla bean, nutmeg, and 1 tablespoon of eggnog. Add egg mixture to butter and continue mixing. Add dry sugar cookie mix and mix with hands or mixer until dough is formed.
Cover dough in bowl with plastic wrap and refrigerate for 20 minutes. Preheat oven to 350 degrees.
Remove dough from refrigerator. Roll into tablespoon sized balls and place onto parchment-lined cookie sheet and press lightly with fingers to flatten. Place in oven and bake for 15-17 minutes or until edges are golden.
While cookies cool, combine powdered sugar, vanilla extract, and 2 tablespoons of eggnog in a bowl. Whisk until icing smooth and all lumps are gone. Use a spoon to apply icing to cookies. Sprinkle with turbinado sugar.
