1 package Foodstirs Organic Chocolate Lovers Brownie Mix

2 eggs

1/3 cup oil

1 tablespoon water

2 cups chocolate chips

½ teaspoon peppermint extract

1 package Foodstirs Organic Vanilla Frosting Mix

3 tablespoons unsalted butter

2 tablespoons Greek yogurt

3 tablespoons half and half

Green food dye


Preheat oven to 325 degrees. Grease 8” brownie pan with non-stick cooking spray.

In a medium bowl, whisk eggs with water, oil, and ¼ teaspoon peppermint extract. Pour in brownie mix and continue whisking until fully incorporated. Add 1 ½ cups chocolate chips and stir.

Pour batter into greased pan and bake for 24-24 minutes, or until toothpick comes out clean. Allow brownies to cool completely before frosting.

Use an electric hand mixer to beat butter and Greek yogurt in a large bowl. Slowly add the vanilla frosting mix and continue mixing at medium speed until frosting is smooth. Add ¼ teaspoon peppermint extract and a few drops of green food dye and beat until color is evenly distributed. Spread frosting onto the top of the brownies until they are fully coated and the surface is even. Refrigerate for 15 minutes.

While the brownies refrigerate, make the ganache. Place the remaining chocolate chips and half-and-half into a small saucepan over medium heat. Stir constantly until chocolate has melted.

Use a fork to drizzle ganache over frosted brownies. Refrigerate for at least 20 minutes before cutting into squares.
