2 1/2 cups quick cooking oats
1 c coconut flakes
1/2 cup brown sugar
1/2 tsp salt
1 1/2 cups dark chocolate chips
1 cup coconut oil, melted
1 tablespoons vanilla
Preheat oven to 350 degrees and spray a 9x13 baking pan with non-stick cooking spray. In a large bowl, combine sugar cookie mix, oats, coconut flakes, brown sugar, salt and one cup of the chocolate chips. Set aside.
In another large bowl, using an electric hand blender, mix together the coconut oil, eggs and vanilla. With the mixer on low speed, slowly add the dry ingredients to the egg mixture and blend until a dough forms.
Using your hands, spread half the batter into the bottom of the prepared pan, in an even layer. Sprinkle on the remaining chocolate chips, then place the remaining dough over the chocolate chips, gently pressing with your fingers.
Bake 20-25 minutes, until the edges begin to brown. Allow bars to cool at least 30 minutes before slicing.
