1 package Foodstirs Organic Simply Sweet Vanilla Cake Mix
6 T butter, room temperature
3 T coconut oil, melted
6 T coconut milk
6 T coconut cream
3 T lime zest
1 ½ cups vanilla frosting
1 cup shredded sweetened coconut
Preheat oven to 350 degrees and line cupcake tins with paper liners; set aside.
In a mixer bowl at low speed, mix all wet ingredients, 2 T lime zest and the dry cake mix until just combined; scrape bowl. Turn mixer to high and beat for 1 minute, scraping the bowl as needed.
Divide batter evenly into cups and bake for 16-18 minutes, or until toothpick inserted into the the center comes out clean. Cool cupcakes for 5 minutes before removing from pan.
Combine remaining zest with vanilla frosting and stir until well blended. Once cupcakes are cooled, spread frosting across the tops and apply shredded coconut.
