Coconut Key Lime Cupcakes

Yields: 24 Cupcakes

1 package Foodstirs Organic Simply Sweet Vanilla Cake Mix
3 eggs
6 T butter, room temperature
3 T coconut oil, melted
6 T coconut milk
6 T coconut cream
3 T lime zest
1 ½ cups vanilla frosting
1 cup shredded sweetened coconut



Preheat oven to 350 degrees and line cupcake tins with paper liners; set aside.

In a mixer bowl at low speed, mix all wet ingredients, 2 T lime zest and the dry cake mix until just combined; scrape bowl. Turn mixer to high and beat for 1 minute, scraping the bowl as needed.

Divide batter evenly into cups and bake for 16-18 minutes, or until toothpick inserted into the the center comes out clean. Cool cupcakes for 5 minutes before removing from pan.

Combine remaining zest with vanilla frosting and stir until well blended. Once cupcakes are cooled, spread frosting across the tops and apply shredded coconut.Coconut Key Lime Cupcakes
