1 package Foodstirs Organic Chocolate Lovers Brownie Mix
1/3 cup coconut oil
1 tablespoon water
1 ¾ cups shredded coconut
1 package Foodstirs Organic Vanilla Frosting Mix
4 oz. cream cheese
1 cup dark chocolate chips
1/4 cup half and half
Preheat oven to 325 degrees. Grease 8” brownie pan with coconut oil.
In a medium bowl, whisk eggs with water and coconut oil. Pour in brownie mix and continue whisking until fully incorporated.
Bake for 20-22 minutes, or until toothpick comes out clean. Allow brownies to cool completely before frosting.
Use an electric hand mixer to beat cream cheese in a large bowl. Slowly add the vanilla frosting mix and continue mixing at medium speed until frosting is smooth. Add the shredded coconut and beat for a few seconds, until combined. Reserve a handful of coconut for the top of the brownies.
Spread coconut-frosting mixture onto the top of the brownies until they are fully coated and the surface is even. Refrigerate for 15-20 minutes.
While the brownies refrigerate, make the ganache. Place the chocolate chips and half-and-half into a small saucepan over medium heat. Stir constantly until chocolate has melted and mixture thickens. Remove from heat and allow ganache to cool for 5 minutes, stirring occasionally.
Pour ganache over frosted brownies and spread. Sprinkle with reserved coconut and refrigerate for at least 45 minutes before cutting into squares.
