1 package Foodstirs Organic Chocolate Chippy Cookie Mix
6 tablespoons butter, room temperature
2/3 cup chocolate chips
24 large marshmallows
24 lollipop sticks
Preheat oven to 375 degrees.
In a mixer, blend butter on low speed until smooth.
Add egg and continue blending until incorporated.
Add dry mix and blend on low until a dough forms.
Refrigerate dough for 30 minutes.
Scoop rounded teaspoons of dough and roll into balls.
Place on a parchment lined baking sheet and bake for 6-8 minutes, or until golden.
While cookies cool, place marshmallows onto lollipop sticks. Place each marshmallow onto the underside of a cookie and microwave for 10-15 seconds, until marshmallow just starts to melt.
Place another cookie on top of the marshmallow to create a sandwich, pressingly lightly, then microwave for an additional 10 seconds. Repeat until all s’mores are created.
Microwave chocolate chips in 20 second increments, until fully melted.
Use a fork to drizzle melted chocolate onto each s’more.
Allow chocolate to set before serving.
