1 Foodstirs Organic Pancake mix
2/3 cup milk
3 tablespoons softened butter + 3 tablespoons melted butter
3 tablespoons greek yogurt
2 teaspoons cinnamon (divided)
1/4 teaspoon nutmeg
1/4 teaspoon cardamom
1/3 cup granulated sugar
Preheat oven to 350 degrees and spray a mini muffin tin with nonstick cooking spray, set aside. In a large bowl using an electric hand mixer, blend the eggs, milk, softened butter and yogurt.
Slowly add the dry pancake mix, 1 teaspoon of cinnamon, nutmeg and cardamom, then mix until a batter forms. Fill the wells of the mini muffin pan 3/4 full and bake 10-12 minutes or until a toothpick inserted into the center comes out clean.
Combine the granulated sugar and the remaining cinnamon in a small bowl. Brush each muffin with the melted butter and roll in the cinnamon and sugar mixture.
