Brownie Ice Cream Sandwiches

Yields: 10-12 sandwiches

1 package Foodstirs Organic Chocolate Lovers Brownie Mix

2 eggs
1/3 cup oil
1 tablespoon water
1 quart ice cream (any flavor)
½ cup sprinkles



Spray two 8 x 8” pans with nonstick cooking spray. Preheat oven to 325 degrees. Whisk eggs in a mixing bowl. Add oil and water and whisk until blended. Slowly add in brownie mix and stir until well-blended. Evenly distribute batter into prepared pans and place in oven. Bake for 12-14 minutes. Allow brownies to cool completely in pan.

Once brownies have cooled, spread slightly softened ice cream to cover the top of one pan of brownies. Once the first square is covered with ice cream, place the other brownie square on top, pressingly firmly to set. Place pan in freezer until ice cream is frozen solid, at least 6 hours; then cut into bars. Place sprinkles on a plate and firmly press the edges of each sandwich into the sprinkles to coat the ice cream. Return to freezer until served.
