1 package Foodstirs Vanilla Cupcake Mix
6 tablespoons melted butter
1 cup Greek yogurt
1 cup rolled oats
1 ¼ cup blueberries
2 teaspoons orange zest
2 tablespoons orange juice
Preheat oven to 350 degrees and line 12 muffin cups with paper liners.
Whisk egg; add melted butter and zest and continue whisking until mixture thickens slightly.
Add orange juice and yogurt and whisk until combined. Fold in oats and let mixture stand for 5 minutes. Add cupcake mix and stir until well blended. Gently fold in the blueberries.
Fill muffin cups ¾ full and bake for 32-35 minutes, or until tops are golden.
