1 package Foodstirs Organic Chocolate Lovers Brownie Mix
1/3 cup oil
1 tablespoon water
2 ¼ cup blueberries
1 cup heavy whipping cream
½ cup powdered sugar
5 oz. cream cheese
Preheat oven to 325°F and spray an 8” or 9” square pan with nonstick cooking spray.
Whisk eggs in a medium bowl. Add oil and water; whisk until well-blended. Add dry Brownie Mix and stir until combined; batter will be thick.
Pour batter into prepared pan and spread evenly. Bake for 20-22 minutes, or until toothpick inserted into the center comes out clean. Let brownies cool.
Puree ¾ cups of blueberries in food processor or blender until smooth.
In a large bowl, use an electric mixer to whip the heavy whipping cream with ¼ cup of powdered sugar until peaks form.
In a separate bowl, beat cream cheese and remaining powdered sugar on medium speed until fluffy. Add pureed blueberries and mix until well-combined. Carefully fold in whipped cream and refrigerate mixture until ready to assemble.
Once brownies are completely cooled, cut into small cubes (about ½ inch) and set aside.
To assemble the trifles, place a small handful of berries in the bottom of a glass or jar. Top with a large spoonful of cream followed by a layer of the cubed brownie pieces. Repeat this layering process at least once more—or until your glasses are full.
