1 package Foodstirs Sugar Cookie Mix
8 tablespoons butter, melted and slightly cooled
1 teaspoon lemon zest
3/4 cup frozen or fresh blueberries
Preheat oven to 350 degrees and spray and 8x8 pan with nonstick spray.
Whisk egg in a large bowl and slowly drizzle in melted butter. Stir in the lemon zest then add the sugar cookie mix, stirring until a thick batter forms.
Carefully fold in the blueberries, gently mixing with your hands. Turn out the mixture into the greased pan and gently press down with your fingers until an even layer is made.
Bake for 20 minutes or until the top turns a light golden brown.
