1 package Foodstirs Sweet Tooth Sugar Cookie Mix
12 tablespoons unsalted butter, cold (cubed)
1 cup berries, chopped
1 tablespoon sugar
1 teaspoon vanilla extract
Beat butter until creamy then blend in egg. Add dry Organic Sweet Tooth Sugar Cookie Mix and blend until fully incorporated.
Gather dough into a ball and flatten into a disc. Wrap dough in plastic wrap and freeze for 20 minutes, or until dough is firm enough to roll.
While dough is firming, place berries, sugar, and vanilla in a small bowl and stir to combine.
Preheat oven to 350 degrees. On a well-floured surface, roll out dough to about ¼” thick and cut using a 3” cutter. Place 12 cookies on a parchment lined or ungreased cookie sheet.
Place about a tablespoon of the berry mixture into the center of each cookie and top with another piece of cut dough. Use a fork to seal the edges.
Bake for 11-13 minutes, or until edges are lightly browned.
