Apple Pie Cupcakes

Yields: 18 cupcakes

Ingredients:
1 pack Foodstirs Organic Simply Sweet Vanilla Cupcake Mix
3 eggs
2 sticks butter
1/4 cup milk
1/4 cup + 2 tablespoons yogurt
3 apples, peeled/cored and cut into small cubes
1/4 cup brown sugar
1 teaspoon cinnamon
1 pack Foodstirs Frosting mix
1/2 tsp vanilla

Directions

Preheat oven to 350 degrees. Blend eggs, 9 tablespoons of butter, milk, and 1/4 cup yogurt with the dry mix, beat ingredients for one minute.

Line muffin tins with paper liners and fill each 2/3 full with cake batter. Bake 17-20 minutes, or until a toothpick inserted in the center comes out clean.

Combine diced apples, brown sugar, 4 tablespoons of butter and 1/2 teaspoon of cinnamon in a small saucepan and cook until apples become tender, at least 10 minutes. Set aside.

With a small knife, cut a small hole in the top of each cupcake and scoop out the cake. Fill the center with the apple mixture until it is even with the level of the cupcake.

Cream together 3 tablespoons of butter and 2 tablespoons of yogurt. Slowly add the frosting mix, then add the vanilla and 1/2 teaspoon of cinnamon. Blend until smooth then pipe or spread onto each cupcake. Top with remaining apple filling, if desired.
