Pumpkin Pancakes

Fall is the perfect time to teach children about farm-to-table fruits and vegetables. A visit to the pumpkin patch can inspire your entire family to get creative with pumpkins. Show your children that they can do more with a pumpkin than just carve it with this tasty autumn recipe. Pumpkins are loaded with a ton of nutrition, such as vitamins A, C, and E, antioxidants, and fiber. As a parent, you can feel good about giving your child a homemade meal loaded with fresh or canned pumpkin. Below is pancake recipe that is healthy, fun, and delicious! They freeze and reheat well, so large batches can be made and stored for another day.   How Kids Can Help:
  • Mixing ingredients.
  • Pouring batter into pan (with adult supervision.)
  • Flipping pancakes (with help from an adult.)
  • Cutting out pumpkin shapes with a cookie cutter.
  • Decorating the jack-o-lantern faces with raisins or chocolate chips.
