Street Corn Waffles

Street Corn Waffles

Cook: 2 min (per waffle)
Yields: 8 waffles

For waffles:
2 cups Foodstirs Organic Sunday Stacks Pancake Mix
2 cups organic cornmeal
4 eggs
8 Tbsp butter, melted
1 cup buttermilk
2 tsp chili powder
1 tsp kosher salt
For spicy mayo:
1 cup organic mayo
2 garlic cloves, finely chopped
The juice of 1 lime
2 tsp lime zest
1 tsp chili powder
To garnish:
1/4 cup cotija cheese


In a large bowl, whisk together eggs, melted butter and buttermilk. Add in pancake mix, cornmeal, chili powder and salt. Blend until smooth.

Heat waffle iron and spray with non-stick spray. Scoop batter onto hot waffle iron and cook 2-3 minutes or until done. Repeat with remaining batter.

In a large bowl, mix together all ingredients together for spicy mayo. Drizzle over cooked waffles and garnish with cotija.
