Preheat oven to 375 degrees and line a baking sheet with parchment paper. Place freeze dried strawberries into a blender and pulse until completely pulverized. Pour powdered strawberries into a large bowl, then add eggs, melted butter and Foodstirs Organic Simply Sweet Vanilla Cake Mix and stir until a thick batter forms.
Measure tablespoon sized balls of dough and place 1” apart on prepared pan. Bake 8-10 minutes, until the edges of the cookies begin to brown and the middle is set. Cool 5 minutes on cookie sheet, then transfer to a wire rack and cool completely.
To make the filling, use an electric hand blender to mix the room temperature cream cheese until light and fluffy, about a minute. Slowly add Foodstirs Organic Vanilla Frosting Mix and vanilla, then blend until all incorporated.
Place a tablespoon of frosting onto the bottom of half the cookies. Sprinkle frosting with rainbow confetti then top with a second cookie. Repeat with remaining ingredients. Serve immediately.
