Yields: 12 Pancakes
For Pancakes:
1 Foodstirs™ Organic Sunday Stacks Pancake Mix
4 Eggs
8 Tbsp Melted Butter, melted and cooled
1 1/3 Cups Milk
1 Cup Greek Yogurt
1/2 Cup of Green Dream Superfood Plant Based Protein
For Toppings:
Strawberries
Blackberries
Blueberries
1 Dollop of Greek Yogurt
Flax Seeds
Directions
Heat skillet or griddle over medium heat or to 300 degrees. Lightly coat with butter or non-stick cooking spray. In a large bowl, whisk egg, then slowly add melted butter and whisk until slightly thickened. Add milk and yogurt and green dream superfood protein, then whisk until mixed.
Use a food processor to blend spinach to a paste. Add spinach to mix. Add Foodstirs™ Organic Sunday stacks Pancake Mix and whisk until smooth.
Ladle just under a quarter cup of batter onto a hot griddle.
Cook pancakes 1- ½ to 2 minutes or until the surface of pancake forms bubbles which begin to pop and bottoms are golden brown.
Carefully turn pancakes over with a spatula and cook on the second side until pancakes are cooked thoroughly.
Make a stack of 3-4 pancakes. Garnish top with a dollop of yogurt, chia seeds, and berries.
