Foodstirs Organic Vegan Sweet Potato Pancakes with Coconut Yogurt and Pecans

Ingredients for Pancakes:

1 1/2 cup Foodstirs Organic Sweet Potato Pancake Mix
1/4 cup organic applesauce
1.5 cups almond milk
1 tbsp cinnamon powder

Ingredients for Toppings:

2 tbsp coconut yogurt
1 tbsp chopped pecans
3 tbsp organic agave syrup
1 tbsp cinnamon powder

Directions for Pancakes:

  • Preheat griddle stovetop on medium to low heat; spray with non-stick cooking spray
  • Combine the applesauce, almond milk and Foodstirs Sweet Potato Pancake Mix in a bowl
  • Stir until completely incorporated
  • Remove 2 tbsp of the vegan pancake batter
  • Mix 2 tbsp batter with the 1 tbsp of cinnamon powder. Add cinnamon batter to help swirl the pancakes.
  • Pour dollops of the pancake batter onto the griddle; pipe a cinnamon batter swirl in the center
  • Flip when golden brown
  • Repeat until the batter is gone, set aside
  • Stack these clean and vegan pancakes high, spoon the coconut yogurt on top, add chopped pecans, drizzle agave and finish off with a cinnamon powder sprinkle
