Cut mozzarella sticks in half and pop in the freezer for about an hour or until firm.
Set out two medium shallow bowls: in one, put all dry ingredients + seasonings and in the second, whisk together the eggs and milk.
Line a baking tray with parchment and begin dredging mozzarella sticks first in the dry mixture, then the egg, and then the dry again. Repeat the dredging process if desired.
Place dredged sticks onto the parchment-lined baking tray and freeze sticks for at least 1 hour. Remove from freezer and dredge again to ensure a thick coating.
When you’re ready to bake, preheat the oven to 400*F. Before baking, spray the mozzarella sticks with a cooking spray and place the mozzarella sticks in the oven for 6-8 minutes.
When the sticks have reached your desired brown, remove from oven and cool for about 3 minutes before indulging!
