You'll be surprised to find that the cookie mix is low sugar and tastes just as good as a homemade cookie when made using your favorite vegan egg substitutes and dairy alternatives.

Ingredients:

Cookie Skillet:

  • 1 Foodstirs Organic Chocolate Chippy Cookie Mix
  • 1 Egg or Replacement (1 Tbsp Flax and 3 Tbsp Hot Water)
  • 6 TbspRise Brewing Co. Oat Milk Latte Nitro Cold Brew Coffee

Toppings:

  • 1 CupOrganic Brown Sugar (packed)
  • 1/2 Cup Rise Brewing Co. Oat Milk Latte Nitro Cold Brew Coffee
  • 4 Tbsp Vegan Butter
  • 2 Cups Rise Brewing Co. Oat Milk Latte Nitro Cold Brew Coffee (very cold)
  • 3 Tbsp Organic Powdered Sugar

Directions:

For Cookies:

1. Preheat oven to 350 degrees Fahrenheit. In a large mixing bowl, combine the Foodstirs Organic Chocolate Chippy Cookie Mix, egg replacement and Rise Brewing Co. Oat Milk Latte Nitro Cold Brew Coffee. Stir until well-combined and pour into a medium sized skillet. Pro tip: Save your arms by using an electric mixer for this step. Mix on medium-low speed until the batter is smooth and there are no lumps.

2. Transfer the cookie batter to a large cast iron skillet, a small jelly roll pan or a similar baking dish. Bake the cookie for 15 to 20 minutes or until golden brown and slightly risen. Allow to briefly cool.

3. In a small saucepan, bring 1 cup of brown sugar and 1/2 cup of Rise Brewing Co. Oat Milk Latte Nitro Cold Brew Coffee to a boil until a caramel forms. Remove from heat and whisk in 4 tbsp Vegan Butter to stop the cooking process. Allow to cool at room temperature.

4. Pour 2 cups of very cold Rise Brewing Co. Nitro Cold Brew Coffee into a large bowl and begin whipping with an electric hand-mixer or stand-mixer. Slowly add in the 3 tbsp of Powdered Sugar and whip until soft peaks form. Immediately place the bowl into the freezer until ready to serve.

5. Once ready to serve, place a slice of the skillet cookie on a plate, then drizzle with the caramel sauce and top with a large dollop of the whipped cream. Enjoy!
