Preheat oven to 350 degrees and spray a 9x13 pan with non-stick cooking spray. Set aside.
In a large bowl, combine organic cookie mix and cold, cubed butter. Use your hands or a pastry cutter to blend the butter into the dry mix, until a dough forms. Evenly press dough into bottom of prepared pan. Bake 13-15 minutes, until golden. Cool slightly
In a large bowl, combine eggs, corn syrup, cane sugar and vanilla. Whisk in melted butter until mixture is smooth. Fold in pecans and chocolate chips. Pour mixture over baked crust.
Bake 25-30 minutes, or until golden and set. Cool completely on a wire rack then cut into squares and serve. Store in refrigerator up to 5 days
