4 Tbs unsalted butter, melted
2/3 cup buttermilk
1 cup sharp cheddar cheese, shredded
3 Tbs chives, finely chopped

In a large bowl, whisk together eggs, melted butter and buttermilk. Add pancake mix, cheese and chives and stir until a batter forms.
Pour about 1/2 cup of the batter into a heated nonstick waffle iron. Cook 4-5 minutes, or until golden. Repeat with remaining batter. Serve with maple syrup.
