Yields: 10-12 pancakes
2 Cups Foodstirs Organic Sunday Stacks Pancake Mix
1 Package Applegate Organics Hickory Smoked Uncured Sunday Bacon
4 Tablespoons melted butter
2/3 Cup milk
1/2 Cup plain yogurt
Place bacon on a nonstick griddle and heat to 350 degrees. Cook until brown and crispy on both sides. Remove from griddle and set aside.
In a large bowl, whisk egg, then slowly add melted butter and whisk until slightly thickened. Add in milk and yogurt and whisk until mixture is smooth. Add Organic Sunday Stacks Pancake Mix and whisk until batter is smooth.
Ladle batter onto griddle. Use your fingers to crumble bacon into the batter, about one slice of bacon per pancake. Cook until bubbles begin to form in the middle of the pancake. Flip to the other side and cook one minute more. Repeat with remaining batter and bacon.
Serve with warm maple syrup and butter!
